Bumbleberry Lavender Upside-Down Cake

Preheat Oven to 350 degrees.
Grease and Flour a 9 x 9 square pan.
Toss in 4 Cups of mixed berries (bumble) Note: I use blueberry, strawberry, and blackberry.
Sprinke the berries with one half cup of sugar.
Cake Batter:
1 cup of warm milk that has been scalded with 2 teaspoons of lavender in it, and let it stand for five minutes.
Add three quarters of a cup of margarine, 1 cup of sugar, two egg yolks (save the whites), 1 teaspoon of vanilla, 2 and a half cups of unbleached flour, two teaspoons of baking powder, and three quarters of a teaspoon of baking powder. Set this batter aside.
Second Batter: Whisk two egg whites with a half cup of sugar until white and stiff (it takes patience and it helps if the egg whites are room temperature) when stiff, gently fold into first batter until suitably mixed and then pour on to berries. Bake 55 minutes and cool for ten minutes.
Optional glaze: which I never use, 1 and a half cups of icing sugar with two Tablespoons of cream, and 2 Tablespoons of margarine. Drizzle on.

Hi Patty,
Not made this yet but I did make the fairy bread which was excellent, it keeps very well too, or should I say it keeps as well as having it in the house of a hungry person allows it to be kept. I didn't put in all of the honey as I didn't have enough but was then able to give it to my diabetic friends who enjoyed it too.

so, I lost, and wound up making this at our house.incredibly the lavender does come thru.
Elaine is at some crafting do and will be pleasantly surprised, though most of this will wind up with her father. I got lucky and added one of the measures of baking powder to the second batter. I never quite got peaky whites, but the cake turned out lovely at any rate. Thanks so much, fairy cake next.

I forgot to say that the gods of bumble were with me and as i put this in the oven I noticed that a bloody great blackberry had stuck to the bottom of my shoe and lets just suffice it to say that pretty nearly the entire kitchen floor was covered in bumble business. nothing a washrag and another ten minutes couldn't fix though.

As for the uses of lavender. "The Druids Herbal - For the sacred earth year. by Ellen Evert Hopman (Very good book) lists many benefits. Ingested for migraine dizziness and intestinal gas. As an ingredient in antiseptic salve. The fragrance helps you sleep. A tea will ease nausea and vomiting. Mixed with wine for anti-depressant beverage. Oil for footbaths toothaches and sprains etc etc. Magically it brings peace joy and healing to the home. The men-folk were unsure of eating something with flower buds in it, but although odd at first you find yourself craving it after a while. So I use it whenever I can. If you have any recipes with lavender...please share.
