Entry-Wolfwalker's Yule Cookies

Postby SpiritHealer » 24 Dec 2004, 13:37

As requested, copied from the pub

Wolfwalker's Yule Cookies

2 cups of flour
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
1 cup softened margerine or butter
1 cup brown sugar (pressed down)
1 lg egg
1 tsp vanilla
1/4 tsp almond extract
1/8 tsp ground cloves or to taste
1/8 tsp allspice
1/4 tsp nutmeg or to taste
1/4-1/2 tsp cinnamon
1 cup plus of chopped candied fruit, mixed peel, etc;
optional are nuts, raisins, etc. as you like...

Preheat your oven to 350 degrees

Cream margerine well and add the brown sugar to combine well; add egg and vanilla and almond extracts
add the spices, baking powder, baking soda & salt and beat through
add flour a bit at a time, mixing thouroughly into the batter...
if it seems a little dry, wait til you have the fruit in before adding extra moisture...
mix the fruit etc in thouroughly (if it has juice add that too!.
If the batter is still a bit too dry looking at this point,
add a cpl of tsp of either water or milk and mix through. It should be a thick gooey dough that's rather heavy. This is not feather-light sugar cookies! Don't sweat it...

spoon batter onto baking sheets and leave space for the cookies to 'spread' during baking; bake for 8 to 10 minutes at 350 degrees
when done golden brown, remove from oven and cool on racks...
wait at least a few minutes before cheating and tasting since with all this fruit in them, they hold the heat like a dragon!
Bon appetite!
blessings of the Yuletide, Peter

will someone please copy this over to the competition for me? I'm too sleepy to re-type it there myself. I don't know if we have a food category! (maybe "handicrafts"... nothing says loving like cookies from the coven!)

Potato Clouds - Entry

(I only know how to make large quantities of these, you can halve the recipie if you wish)

First, make the potatoes:

5lb all-purpose potatoes, peeled and diced 1"
water
1T salt plus to taste
1 stick butter
1 16oz can parmegian cheese (powder)
some milk
garlic powder and pepper to taste

Put the potatoes in a big pot with the 1T salt, and cover with water. Bring to a boil and boil for 20 min, or till fork-tender. Drain, and return the potatoes to the pot, with the stick of butter. Mash thoroughly with a masher, do not whip or use a beater. Add all the parmesan cheese, and mash thoroughly again. Add milk while still mashing, till the desired consistency is reached. Taste, and add salt, pepper, and garlic powder till perfectly tasty. The cheese is already salty, so maybe you won't need extra salt.

How to make the clouds:
The next day, spoon the potatoes onto a shallow dish, and warm in the microwave. The cheese will expand, and the potatoes will be all puffy, like clouds.

ENTRY !!! Mey's New Year Cranberry Punch

Postby Mey » 27 Dec 2004, 13:00

ENTRY!!!

In Dutch measurements:

One huge bowl (I use my 10 litre soup pan)
500 grams Cranberries (boiled to sauce, then blended in a kitchenblender and cooled down in the fridge)
One pineapple (fresh, not canned!!!) (peeled and cut in pieces) (save as much juice as you can)
Three bananas (peeled and cut in pieces)
Two apples (washed and cut in pieces)
Two cans of tangerineparts and the juice (I hate it to cut out all the little parts myself)
Canned tropicalfruits from the grocerystore or dried fruits that can soke in the alcohol. (or both)
1/2 litre Wodka
1/2 litre Mead :mead: (make sure that no herbs are added to the mede)
Rosemary twigs

:poof:

Peel and cut everything, boil the berries and put them in the kitchenblender and then in the frigde to cool down.
When everything is peelde and chopped, put everything in your bowl or pan (cauldrons look nice!) and add the alcoholic stuff. Stir to mix everything nicely.
Add some twigs with rosemary leaves and leave that for about 24 hours to let the flavoures mix and for the dried fruits to get soked with alcohol.

Give it a good final stir before you serve it chilled (basement temperature is good enough).

Enjoy! It's lovely!

And a happy newyear to you all!
