as it is time consuming i recommend cooking this on a day off, when you've nothing to do.
2 servings...
1. boil 2 whole chicken breasts in seasoned water {i use a pinch of salt, some pepper and Worcester sauce} ,about 2 hours keep an eye on water level as it will boil off and more needs to be added, untill chicken is easily pulled apart, remove from water and cool.
2. while chicken is cooling sautee some crushed garlic and diced onion in sweet cream butter, till golden brown. remove from heat.
3. shred chicken.
4. add shredded chicken to slow cooker {crockpot} stir, add 1 and 1/2 bottles of favorite bbq sauce, cook on low, 5 hours stirring every 30-45 mins so as not to burn sauce.
5. bake 2 large baking potatos to desired consistency,using preferred method, i usually 60-75 minutes at about 375-400 f. degrees.
6. remove potatoes cut a v shape the length of potato and remove making a bowl or "nest"
place butter, sour cream, bacon bits and shredded cheese in the opening, top with bbq chicken serve and enjoy....you will or should have left over bbq chicken for sandwiches....
all ingredients are "to taste" and any spice or seasoning can be replaced or modified as seen fit or "to taste" as it were.......and the measurement requirements are "to taste" as well .
dont forget to punch holes in potatos to release steam from cooking..dont want a "sploded tater in your oven!
if the bbq sauce cooks down add a cup of water slowly stirring it in....
