Guacamole

3 medium avocados, pitted and skinned
1 TBSP lime juice
1 roma tomato, chopped
1 small jalapeno pepper, chopped

Mash the avocados until smooth and creamy. Stir in the lime juice, and then fold in the tomato and pepper. Serve immediately.

Serves 2-4 people.

NOTE: Guacamole doesn't keep well as a leftover: it's best to consume it all in one sitting.

Ramps are an awesome seasonal delicacy at this time of year in my area. This is a great soup that kick starts the "green" season & can be frozen for later in the summer.

Ramp & Barley Soup

6 cups chicken stock (or a hearty veggie stock)
3/4 cup hulled barely
1/2 lb well washed ramps white & green parts separated & sliced
1 stalk celery
1 med carrot
Salt & pepper to taste

Bring stock, ramp whites, celery & carrot to a boil. Reduce the heat & let simmer about 45 minutes or until the barley is tender. Add in the ramp greens. Put 1/2 the soup in a blender or food processor & puree until smooth. Add back to the pot & stir. Season with the salt & pepper.
This can be served hot or cold.
